Sooji And Veggie Squares – Suji ka Nashta – Indian Snack Recipe – Breakfast Recipes

Welcome to my channel We all love crispy snacks but unfortunately most of these crispy snacks are either deep-fried or cooked in some un-healthy way In today’s recipe video I am going to share with you a delicious and tasty, crispy recipe of snack which is full of veggies some creaminess with some cheese, if you want to use that and that is not deep-fried. In today’s episode I am going to make these Semolina Veggie Squares You can serve them as a tea-time snack, as a party-appetizer or as an afternoon snack for your kids.

So, let’s begin the recipe Heat one tablespoon of oil in a pan add 1/4th cup of chopped onion 1/4th cup of green peas I have also added some chopped french beans carrots mushrooms I have used these vegetables you can use vegetables of your choice whatever is available in your fridge, you can use that I am going to saute all these vegetables for 3-4 minutes on medium heat
While cooking vegetables do not cook too much because slight bite in veggies tastes the best after roasting or sauteing these vegetables
I have added Sooji or Semolina So, now for this step you need to reduce the heat to the slowest and roast the sooji on slow to medium heat all the while keep stirring the sooji because that ensures there is no raw taste of sooji or semolina and neither it is burned we don’t want brown semolina here.
We just want the white color. But a properly roasted one. That is very important for the texture of the cutlet So after these vegetables and Sooji or semolina is roasted well I am adding water. This is roughly five times the amount of sooji we have used in the recipe So, now to season it up I am adding salt you can add salt as per your taste for the flavor I have used mixed herbs you can add pizza seasoning if you like that or you can go for Indian mint rai mint or dhaniya powder This is completely as per your taste So, cook this for 3-4 minutes on medium heat and add lime juice Mix it well Now, I have added boiled and mashed potatoes mix it well Along with the potatoes I have added green chilies some mint leaves coriander leaves or dhaniya leaves 2 (two) tablespoon of cheese will make it more creamier and will mix them well.
Now, the mixture is ready I am going to spread this mixture on a parchment paper If you don’t have a parchment paper, you can use a grease tray or thali as well. I am going to spread this evenly in a flat layer Now, this mixture has to be refrigerated for 30-to-40 minutes and then I am going to cut it into squares I am going to cut them into squares, you can cut them into any shape you want if you have cookie cutter or biscuit cutter or fancy shapes, you can use those as well.
Now, these squares are ready, you can immediately make snack with them by frying or you can just keep them in your fridge and just shallow fry them, whenever you require to eat them. I am going to fry them right now. So, preparing these crispy veggie squares Oil in a pan; two to three(2-3) tablespoons of oil is good enough for this and place these squares when the oil is hot So, shallow fry these on medium heat ’til they become crispy from all the sides Our Sooji and veggie Square or Veggie and potato Square, whatever you call them are ready and enjoy them hot with chutney of your choice green chutney, ketchup whichever you like.
